Manufactured "Origine France Garantie", we have taken particular care in the design of this depositor. Produced and assembled by a team of experienced technicians, the GM400/600 is intended for manufacturers and ambitious entrepreneurs.

The GM (large model) is available in two table widths: 400 or 600 mm for european sized trays, or 450 or 660 mm for American sized trays. Built around a stable and robust frame, it will guarantee you rare reliability.

Equipped with a double head unique on the market, it will offer a high rate, while maintaining constant regularity, optimal precision and limited loss.

The simple disassembly of this head and the possibility of putting all the parts in the dishwasher will facilitate cleaning.

Equipped with a 10-inch touch screen with a remotely controlled Windows interface, you can be in constant contact with our team of technicians.

The "program" interface, which is constantly evolving, can be updated at your convenience. Its ease of use, programming assistance and memorized backups make it a simple and effective product.

This trainer has two options that can expand its possibilities.

Thanks to a rotating ruler, you can make twisted products (Paris Brest, nest of meringues, etc.).

It can also be fitted with a wire cutting system which will allow you to produce hard doughs (cookies, shortbread, Breton palets, etc.).

With advanced technology, this straightener will allow you a quick return on investment, without any equivalence.

What are the advantages of the Magic Temper?

The Magic Temper enables to crystallize every single mass that contains cocoa butter and milk fats: chocolate, coatings, insides, butter cream, sprayings, ganaches, pralines & spread pastes (every greasy interiors)... 

Sometimes my chocolates are blooming, can the Magic Temper prevent from that?

The Magic Temper participate actively to improve resistance to blooming since other parameters that affect optimimum crystallization are also upheld: quantity of crystals of the cocoa butter from the Magic Temper and cooling rate (time; temperature). Blooming is multifactorial, it's the result of either a bad tempering or a bad storage. 

Can the Magic Temper help with my coating machine?

If your coating machine can cut cool and work in isothermal mode (temperature between 32.5°C and 33°C) then the answer is yes! Afterwards, the added chocolate must be around those temperatures.

The go-getter project was launched in 2014, in order to enrich and diversify the range of straighteners.

 

We wanted to develop a competitive product, while making progress.

Supported by the many requests of our customers, having a trainer, it was logical to favor this product.

 

The choice fell on a mechanical system. Equipped with a compact motor, this system has the advantage of guaranteeing high pressure power when sinking, a guarantee of quality and increased reliability over time.

 

Built around a chassis machined in the mass, it offers a wide range of possibilities, while being robust and compact. The heads are equipped with a heating system, with adjustable temperature, for regular sinking. They are made to measure, according to your needs, in our workshops, taking into account:

 

shape (round, straight edge, flared or square, etc.)

the collar finish (lace, pinched or short)

size (from diameter 40 to diameter 280)

A silent compressor will allow your dough to match the shape of the mould, by a depressurization system when it comes up, while guaranteeing perfect release after baking. The sinking action is driven by the simultaneous pressure of 2 buttons. Safer, this "bi-manual" solution allows easier work, without housing constraints.

 

Like our straighteners, cleaning will be facilitated by a simple and quick dismantling of the head.

 

This compact sized machine will allow you to work quickly (400 to 700 pies per hour) and will bring you precision and regularity.
